Ingredients for 12 Servings

  • 1 1/2 cups
    All-Purpose flour
  • 1 1/2 tsp
    ground cinnamon
  • 1/2 tsp

  • 1/4 tsp

  • 1/8 tsp
    ground cloves

  • 1 cup
    Pumkin puree
  • 1/2 cup
    granulated sugar
  • 1/4 cup
    brown sugar
  • 1/2 cup
    vegetable oil
  • 1/4 cup
    milk

    Cream cheese
  • 1/4 cup
    granulated sugar
  • 1 tsp
    Vanilla extract
  • TOPPING
  • 1/2 cup
    All purpose flower
  • 1/4 cup
    brown sugar
  • 1 tsp
    ground cinnamon
  • 4 tbsp
    butter
  • GLAZE
  • 2 tbsp
    Cream cheese
  • 1/2 cup
    powdered sugar
  • 1/2 tsp
    vanilla extract

Method

  1. Preheat oven to 350F Degrees. Line a muffin pan with paper liners. Set aside.
  2. In a medium bowl mix together flour, spices, baking soda, and salt.
  3. In a large bowl mix together pumpkin, vanilla, sugar, oil, milk and eggs. Stir to combine. Then slowly mix in the dry ingredients. Fill the muffin liners 3/4 the way full and set aside.
  4. In a small bowl beat the room temperature cream cheese, sugar and vanilla extract until smooth. Spoon a dollop of cream cheese mixture onto each of the pumpkin batter muffin cups. Then cover with more pumpkin batter mixture to completely cover the cream cheese.
  5. Next make the crumb topping. In a small bowl combine the flour, brown sugar, cinnamon, and butter together. Crumble the butter and sugars together with your fingers until its crumbly. Top each muffin evenly with the crumb topping.
  6. Bake muffins for 20-25 mins. Insert a forks into a muffin to check for doneness. If it comes out clean then the muffins are fully cooked.
  7. While the muffins cool make the glaze topping. Combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth then drizzle over the muffins. Enjoy!
