Spring Cleaning Pantry Cookies

Ingredients for 5-6 Servings

  • 1 stick
    Unsalted butter, room temp
  • 1/3 cup
    Cocoa powder
  • 2 3/4 cup
    Granulated sugar
  • 1 cup
    Peanut butter
  • 1 tsp
    Vanilla extract
  • 3 1/2 cups
    Rolled oats

Method

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large saucepan over medium heat, melt the butter, cocoa powder, and granulated sugar. Bring to a boil, and let simmer for 3-4 minutes, or until thickened.
  3. Mix in peanut butter, vanilla extract, and rolled oats and remove from heat.
  4. Once slightly cooled, scoop out cookies and place on baking sheet. Place in the fridge for 15-20 minutes, or until cookies are set. Serve cool.
